Bakerlita's 4 Top secrets to the best chewiest fudgiest
  • Secret number one for the fudgiest brownie is to not over-bake your brownie! Timing is absolutely EVERYTHING when it comes to brownies and almost all baking! I like to under-bake my brownies for maybe 2-3 minutes and cool them in them for about 45 minutes. If you can't wait (like me, haha..) pop them into the fridge for 30 minutes before cutting ;)

     

  • Secret number two is that the sweetener you choose makes a world of difference! My personal choice is to only use @Lakanto (monk fruit & erythritol). 
  •  Secret number three is eggs. Your eggs must be at room temperature because if the beautifully melted, chocolatey, buttery ganache is on the warmer side and your eggs are cold from the fridge, you can suspect a thick, hard-to-work-with batter. Even more important with the eggs is to not over-mix them. If you over-mix your eggs, you will add too much air, which equals more of a cakey, not fudgy, brownie! Pro tip ;) 
  • Secret number four is my favourite because this hidden ingredient blesses these brownies to give them that desired chewy texture and enhances these brownies into a beauty-boosting to its beautifying ingredient! Collagen, and lots of it!

    Ingredients in mix:

    organic grass-fed collagen protein, monk fruit, almond meal, coconut flour, cocoa powder, SF & DF chocolate chips & sea salt.

     

    Decadent Fudge Brownie Recipe

    Dry ingredients

    • 1 Bag of Bakerlita's Decadent Fudge Brownie Mix

    Wet ingredients

    • 4 free-run eggs -room temp
    • 3/4 cup grass-fed butter - room temp
    • --- sub for palm shortening or coconut oil to make DF
    • 1/2 cup chocolate chips - melted
    • ---- chocolate chips found in brownie mix
    • 1 teaspoon pure vanilla extract

    Garnish

    • flaky sea salt (optional)
    Instructions 
    1. Position a rack in the lower third of your oven
    2. Preheat to 350°F/180°C. Line with parchment paper the bottom and sides of an 8x8-inch baking pan.Set aside.
    3. Add butter, chocolate chips (from the mix) & vanilla extract to a medium heatproof bowl. Melt over a water bath, constantly whisking (or use the microwave, in 30sec intervals & stir in between). Heat only to melt, not boil.
    4. Remove from heat and allow the mixture to cool slightly.
    5. Add one egg at a time, whisking each egg well, until completely incorporated.
    6. Add the remainder of the brownie mix on top of the melted chocolate ingredients.
    7. Mix/fold with a rubber spatula until thoroughly mixed.
    8. Pour the brownie mixture into the prepared pan, and then, using an offset spatula, even out the top if needed.
    9. Bake for 14-16 minutes.It's better to under-bake than to over-bake brownies.
    10. NOTE: Take a look at the brownies around the 12-14 min mark. Due to the high-fat content in the brownies, they will continue to cook while they cool. Let cool for about 30min in the fridge.
    11. Once the brownies are cooled, lift them using the edges of the parchment paper and cut them into the desired size. (Marcos makes 9 brownies)
    12. Store in an airtight container for up to five days or freeze for up to three months.
