Okay, Let's make COOKIES! I want to share my top 3 easy to follow tips and tricks to make the perfect chocolate chip cookie every time.

  1. It would be best to use soft, room-temperature butter (grass-fed). Using a stand mixer (or a handheld mixer), whipping the butter, sweetener and egg on high speed add air to the cookie, making for a lovely top crackle and spread to your cookies. NOTE: This tip also works with palm shorting and coconut oil for the dairy-free option.
  2. Adding the smallest amount of high-quality, robust blackstrap molasses immolates that beautiful brown sugar taste without the brown sugar.
  3. Collagen! That is an easy tip since it is already in the mix. All you have to do is carefully watch the step-by-step video and read the instructions thoroughly, and you will be pleasantly surprised what a wonderful baker you never knew you were. ;)

Classic Chocolate Chip Cookie Mix Recipe

Dry ingredients:

  • 1 Bag of Bakerlita's Classic Chocolate Chip Cookie Mix
  • 1 pouch monk fruit sweetener - found in the Cookie Mix

Wet ingredients: 

  • 1 free-run eggs -room temp
  • 1/2 cup grass-fed butter - room temp
  • --- sub for palm shortening/coconut oil for DF
  • 2 teaspoons blackstrap molasses
  • 1 teaspoon pure vanilla extract

Garnish

 • flaky sea salt optional

 

Instructions:

  1. In a medium bowl, pour in Chocolate Chip Cookie Mix. (set aside the sweetener)
  2. Cream butter & sweetener (found in cookie mix) in a stand mixer bowl with a beater blade/paddle attachment or an electric hand mixer. Beat until softened, 3-4 minutes. The butter should become lighter and almost double in volume.
  3. Add the egg, vanilla, and molasses to the butter, and continue to cream for another 5 minutes.
  4. Add all the dry ingredients to the butter mixture, and beat again until incorporated.
  5. Prepare a baking sheet with parchment paper. Using a medium-size 1.97-inch scoop, scoop cookies onto the baking sheet. This recipe will yield 9 jumbo cookies or 12 medium cookies.
  6. Using the palm of your hand, slightly press down the cookies.
  7. Place cookies in the fridge for 20min to allow them time to chill.
  8. Preheat oven to 350°F/180°C.
  9. Bake for 9-10 minutes for the large cookies and 12-13 minutes for the jumbo size. Remove from oven. (Macros for 12 large cookies)
  10. Allow the cookies to cool completely on the trays & enjoy with a cup of coffee!
  11. Store in an airtight container for five to six days and freeze for up to three months.
