Festive Fall Waffles Breaky For Two!

Fall weekend mornings are my favourite, especially when the leaves are falling, and you don’t have any cares but to make a fast, and fabulous festive breaky in bed!

I am SO excited to share with you, your NEW Fall Breakfast in Bed recipe, “Oaty Pumpkin Waffles & Lattés” and the best part is that you can make it in less than 15min so you can JUMP bad into bed!!!

Before we get to the recipe, I just wanted to quickly share why this recipe is SO special to me, and how it inspired me to share with YOU!

In Europe, My hubby and I fell in LOVE with oat lattés! We would get one almost every single day... Coming back home, our main missing memory of our trip was enjoying that super clean, earthy, and extremely creamy oat lattes. I had to create a blog post & recipe for YOU, so you may experience the delightful memories of a good simple coffee can do for your day!

  • 1 cup @Natur.a Oat Original unsweetened beverage
  • 4 large Egg 
  • 12 cup Almond Flour
  • 1/2 cup coconut flour
  • 1/4 cup monk fruit (or any sweetener)
  • 1 tsp gluten-free baking powder
  • 1/4 cup pumpkin puree
  • 1/4 cup avocado oil (or coconut oil melted)
  • 1 tsp Vanilla extract
  • 2 tbsp pumpkin spice
  • 1/4 tsp Sea salt
  • 1/4 cup toasted pecan pieces (on each waffle)
  • 2 tbsp maple syrup drizzle. (on each waffle)
Oat Latté:
  • 1 cup Natura Oat Original unsweetened beverage (each Latté)
  • 2 shots of espresso  (each Latté)
  1. Add Natura Oat Beverage, pumpkin puree, avocado oil, egg, and vanilla to a medium bowl. Next, measure out all dry ingredients onto the wet ingredients. whisk together, and set aside.  
  2. Turn on waffle maker, once heated to desire temperature, add 1/2 cup of waffle batter.
  3. Once waffles are cooking away, steam @Natur.a Oat Beverage with a steam wand, or a French press to create a beautiful foamy oat latté. Pour foam over hot brewed coffee or espresso.
  4. Once the waffle maker beeps, serve right away with some chopped pecan and sugar-free maple syrup over waffles! Jump back into your cozy bed & enjoy the easiest & healthiest fall breakfast in bed!
