Pink Gingerbread Loaf

It is officially NINE days until Christmas, and what a better time to give your true love something as lovely as this loaded Gingerbread Loaf Cake…I must say, this will most defiantly make nine ladies dancing ;)

On the ninth day of Christmas, I thought it would be a great idea to start getting into the Christmas BAKING Spirit by celebrating with our first festive recipe, my Gingerbread Keto Loaf with Cashew Spiced Organika Pink Mylk Latté Frosting!!!

This Gingerbread Keto Loaf is LOADED with some pretty glorious ingredients that will surely make you dance your heart out. Warning, this is no average recipe, you may experience extreme JOY and energy you may have never had before, Oh yeah, and NEW found Festive Christmas recipe!

The combination in this Gingerbread Loaf is just heavenly, the fresh ginger and the those warming festive spiced, cup with some share dark chocolate chips, and the sweet tangy cashew cream frosting tones down the loaf perfectly.

RECIPE

LOAF DRY INGREDIENTS
1 Package Bakerlita Beauty Baking Mix 
4 tbsp Organika MCT powder 
4 tbsp Organika Maca 
1 tbsp freshly grated ginger
1 tbsp org. cacao
1 tsp org. cinnamon
1 tsp org. nutmeg
¼ tsp allspice
1 ½ tsp baking soda
1 tsp baking powder


CAKE WET INGREDIENTS

4 large free-run eggs
1 cup coconut milk (unsweetened)
¼ cup grass-fed butter
2 tsp blackstrap molasses


PINK MYLK FROSTING INGREDIENTS
2 cups cashew cream cheese
1 cup powdered monk fruit sweetener
2 tbsp  Organika MCT powder 
2 tbsp Organika Pink Mylk Latté Powder 
1tsp pure vanilla extract
1/2 tsp sea salt
chilled bowl
chilled whisk attachment


NOTE: You can find cashew cream-cheese at a health food store!

 

INSTRUCTION

  1. Preheat your oven to 350 degrees F. – 1 HOUR + 15MIN
  2. Start by greasing one loaf/ cake pan with grass-fed, or you may use coconut oil.
  3. Line loaf pan with parchment paper.
  4. Loaf pan Optimal size: 7”x 4”x 3” (L x W x H)
  5. In a medium bowl, combined all dry ingredients, including the chocolate chips found in the Beauty Baking Mix.
  6. Whisk everything together and set aside.
  7. Melt butter, add the wet ingredients to the same bowl as your dry - For best results make sure wet ingredients are at room temperature.
  8. Whisk everything together until you have a smooth and silky cake batter… Very important that your batter looks more on the liquidy side that thicker side; this is key to create the airier spongy texture cake!
  9. Once you gingerbread loaf batter is done, pour the entire batter into loaf pan.
  10. Pop into your pre-heated oven.
  11. Bake cake loaf for one hour and 45min; depending on the oven & baking pan size...
  12. Once the loaf cake is done, let cool to room temperature for at least 50min.
  13. *To create a perfect cashew cream cheese frosting* you need your ingredients to be room temperature.
  14. The next tip is to whip, whip, whip for a full 5-7 minutes until it gets a bit more volume.
  15. Next, sift in monk fruit powder sugar, and a splash of pure vanilla extract; Whip again for another few minutes.
  16. Lastly, a few tablespoons of coconut milk and add in Organika’s Pink Mylk Latte powder and MCT oil powder to create a paste. Add the paste into cashew cream cheese and beat again.NOTE, make sure it’s runny or it will deflate your frosting.
  17. Once your ginger loaf is completely cooled to room temperature, it’s time to start dressing the loaf with that gorgeously pink rich keto cashew cream frosting. NOTE: if the cake is too warm your frosting will slide off.
  18. To assemble the loaf, add a big dollop of frosting to the top of the loaf.
  19. ; Using an offset cake spatula, try to get the frosting close to the edge of the loaf.
  20. Once it is done, plop the rest of your heavenly creamy frosting right on top and decorate it however you desire!
