 Welcome back to my Bakerlita Bakery! 

I am just SO excited to share this recipe with you! The first reason is that when I was done testing out my new recipe for my YouTubeBakerlita Baking Channel, Tyler, my husband is always my test dummy ;)

I was sitting outside on my balcony and Tyler came up to me looking super concerned? I asked him what was wrong, He said: " These Berry Crumble Bars are the in the Top 3 desserts you have EVER made!!!".

Like, can I get a better compliment than that... haha, seriously though!?

So that is why is am SO excited to show you the full step-by-step behind the scenes how to make those famous Starbucks Berry Oat Bars, yet innovating them into aKeto Crumble Buttery Streusel Berry Bar!

The traditional Starbucks Blueberry oat bar has a whopping47g of carbs per square, and my Bakerilta Berry Buttery Streusel Bars only has 4g of net CARBS per square. And I would have to say The Bakerlita Waytaste much better!

They are loaded with beautiful beneficial berry goodness in every bite. Not only do taste AMAZING, but these berry bars will improve blood sugar & reduce inflammation. Like all my recipes, these are absolutely sugar-free, grain-free and gluten-free… Making these a PERFECT way to indulge guilt-free!

Plus, I am using the lowest carb & sugar berries, which makes these crumble bars, even more, keto worthy!

ARE BERRIES OKAY ON A KETO DIET?

Berries are bit higher in sugar, but they’re fairly low in carbs compared to most fruits, (sadly like bananas... haha), so this means may still ENJOY your beautiful BERRY cravings, guilt-free! Especially when they are added in moderations to your baked goods! 

LOOKY HERE, This is the highest, to lowest, total net Carbs per 1-cup/per serving of all the Keto go-to Berries!  

  • Blueberries – 17 grams/ net carbs
  • Strawberries – 8 grams/ net carbs
  • Raspberries – 7 grams/net carbs
  • Blackberries – 6grams/ net carbs 

Now you see that Blackberries should be YOUR go-to berry too...However, I am pretty lucky because I have a huge farmers field across my street that is LOADED with fresh, organic blackberries :)

Another beauty booster about my Keto Berry Beauty Crumble Bars is that I am using Organika's Collagen & Gelatin Protein. I will teach you how to bloom this beauty enhancing gelatin to ensure the bars don't get mushy... because they are PACKED full of berries ;)

RECIPE

CRUST DRY INGREDIENTS


½ cup coconut flour 
¾ cup almond flour (extra fine)
¼ cup Lakanto Golden 
1tbsp Psyllium husk powder 
2tbsp Organika collagen Protein
½ tsp sea salt


CRUST WET INGREDIENTS


2 large free-run eggs
1/4 cup Grass-fed Butter (room temp)
1 tsp vanilla extract


BERRY BEAUTY FILLING


2 cups fresh organic blackberries (or any berries your desire)
1tbsp fresh lemon juice
2tbsp Lakanto Golden 
1/2 tbsp Gelatin Protein 


CRUMBLE TOPPING INGREDIENTS


¼ cup coconut flour 
½ cup almond flour (extra fine)
2tbsp Lakanto Golden
3tbsp Grass-fed Butter (cold)
½ tsp sea salt
1tsp vanilla extract
1tsp cinnamon


GLAZE


½ cup Lakanto Powdered Sugar
1tbsp fresh lemon juice
1tbsp water
1 tsp vanilla extract

INSTRUCTIONS
  1. In a stand-up mixer bowl or a regular medium bowl, we will start by adding all our dry ingredients for the crust.
  2. First add Almond meal, coconut flour, collagen protein to add a nice chew to your crust, psyllium husk, Lakanto, and sea salt.
  3. Next, we are going to add all the wet ingredients right on top. Room temperature butter, two whole eggs, and a splash of pure vanilla extract and that’s all to it!
  4. Attach beater blade to stand up mixer and mix until it forms a big lump of dough.
  5. If you don’t have a mixer, roll up your sleeves and start beating that dough with your fists!
  6. For this recipe, I am using a small 10x8 inch baking pan, yet you can use the traditional 8x8, or double this recipe and use a regular/standard baking pan.
  7. Grease bottom of the baking pan with butter, line with parchment paper, then place keto dough in the center of the pan and start pressing the crust dough down with our hands, working our way to the edges. Try to make the crust even all the way throughout the pan.
  8. Next, I like to use a fork to poke some holes into the dough to allow a more even bake.
  9. In a small to medium bowl, add fresh blackberries, add freshly squeezed lemon juice and Lakanto. As you mix the berries, you will notice there will be some berry juice at the bottom and too much juice can lead to a mushy berry crust.
  10. My pro beauty tip is to drain the juice and add gelatin protein and let it bloom.
  11. Stir it around until it thickens up and pours back into the fresh berries.
  12. Stir berried until gelatin is well mixed in and then pour the entire berry mixture on-top of our keto crust.
  13. Evenly spread the berries across the crust.
  14. Lastly, it’s time for the BUTTA crumble topping!
  15. We are going to be using the same bowl as we did for the crust, add almond meal, Lakanto, cold cut butter cubes, a dash of salt, a splash of vanilla and to spice it up a little a pinch on cinnamon to enhance the flavors of these berries!
  16. Turn on mixer and beat until it creates the perfect crumble topping!
  17. Sprinkle crumble on top of the berries, gently press down and pop this beauty-berry crumble bars in the 350 Degree, preheated oven for about 20min.
  18. Once the crumble top is that gorgeous golden brown, let cool for at least 30min before slicing.
  19. After crumble bars have cooled down to room temperature, cut into 8 pieces.
  20. To dress these up even more you know I am all about the Glazes.
  21. Add Lakanto powdered sugar, lemon juice, water a splash of vanilla and drizzle on top & ENJOY these blessed Berry Beauty Crumble Keto Bars.
