Strawberry Cream Donuts

You know that I am all about avoiding GRAINS & GLUTEN because it is good for the GUT; That being said, I am also all about using special gut healing ingredients to bless your belly! And these Donuts do this very well I must say! 

These Keto-Donuts are my NEW addition to my Bakerlita Beauty-Bread Mix! Yes, you heard me, right! If you are following me on INSTAGRAM you have seen how I reformulated my Bakerlita Beauty-Bread Mix! it is much fluffier, lighter in appearance, taste, and texture! 

In my Strawberry Cream Keto Donuts, I actually used my mix, and I gotta say, IT WORKED LIKE MAGIC!!! But the even more magical part about these Keto Donuts is that they taste MAGNIFICENT & it is loaded with MIGHTY fiber & prebiotics, so your lovely little good gut bugs LOVE TOO! 

If you know my story, you will know that the whole reason why Bakerlita even exists is because of my gut issues. But It was surly a trial that's turned into the ultimate blessing! 

Do you want to know my little secret ingredient that does this so well? It is the amazing psyllium husk... Another reason why I have been implementing it into so many of my recipes is that it helps your gut produce a short fatty acid called butyrate(also found in grass-fed butter) !

Another beautiful thing about these Keto Donutsis that they are PROTEIN Keto Donuts! YEP, I added a healthy dose of my FAVOURITE beauty-enhancing collagen protein; ORGANIKA Original Enhanced Collagen :) This protein is more than just protein. It has GUT healing properties, beautifying your hair, skin, and nails AND this is the ONLY protein that can't be destroyed and turn toxic when enduring HIGH HEAT!!! It truly is just the BEST! 

Lastly, you know my unfailing LOVE for Lakanto!! I used Lakanto Golden in the Donut Dough, and I used their Powdered Sweetener for the Strawberry Cream Glaze ;) And yes, I liked the bowl clean haha... I know you will too!

1 cup Bakerlita Beaty Bread Mix 
1/3 cup Lakanto Golden 
3 eggs (whole free-run)
3/4 cup (200ml) full fat organic coconut cream 
2 tbsp apple cider vinegar 
2 tbsp grass-fed butter OR Coconut oil
1 teaspoon vanilla extract
1 tbsp honey or real maple syrup (activates the yeast)


1/2 cup full-fat organic coconut cream 
1/2 cup Lakanto Powdered sugar 
3 ripe fresh organic strawberries 
1 teaspoon vanilla extract
pinch of sea salt

  1. Pre-Heat oven to 350. Degrees F.
  2. In a small saucepan/pot, add full-fat coconut milk, grass-fed butter, apple cider vinegar, vanilla extract, and honey or maple syrup to activate the yeast!
  3. Place on medium heat, let it get to a simmering state, about 3-4 minutes.
  4. In a stand mixer bowl or a regular bowl if you are going to mix it by hand; scoop out Bakerlita Keto Beauty Bread Mix & Lakanto Golden. Whisk together and set aside.
  5. Lock in your mixer bowl and attach paddle attachment. Turn on mixer to low speed.
  6. Remove pot from heat and turn off element. Taking the hot liquids, slowly pour into the mixer bowl until you have poured your entire liquid in.
  7. Using 3 room temperature free-run eggs, adding one egg at a time, letting the dough beat/mix until each egg is well incorporated.
  8. Using a rubber spatula, scrape donut dough into a piping bag (you can also you a big ziplock bag).
  9. Grease 2 donut baking pans with butter or coconut oil.
  10. Cut the bottom of the piping bag & squeeze out the dough just enough to fill halfway up the donut whole pan.
  11. Set timer for 15mintues if you want to fry your doughnuts quickly in coconut oil after their done baking. If not, bake for – 20 minutes.
  12. As the doughnuts are baking you can prepare the strawberry cream glaze; In a bowl, sift Lakanto powdered sugar, add full-fat coconut milk, 3 mashed strawberries, Organika's Pink Mylk Latté, vanilla sea salt.
  1. In a small pot, add 1 cup of coconut oil or MCT oil, MCT oil is a bit costly, yet it has a much more neutral flavor in-comparison to coconut oil.
  2. Let the oil come to a light simmer… the doughnuts are already cooked, this just allows the donuts to get that desired fried taste.
  3. Place one donut at a time in the pot with simmering oil, about 5-10sec on each side.
  4. Note, you may re-use the coconut oil after for baking if you don’t want to waste the oil.
  5. Using tongs, or any utensils that you can lift your doughnuts out onto a cooling rack.
  6. Once all the doughnuts fired and on the cooling rack are done let cool for 5 minutes.
  7. Dip top of donuts in the strawberry pink glaze, take a bite and you will never believe these are not the real deal!
