Well, If you're a die heart lover for cinnamon buns like myself, yet don't want to spend the time proofing the dough than these BUNS are for you HUN!

 

My Bakerlita Keto Cinnamon Buns bloom beautifully every single time! And let me tell you, these Buns are next-level delicious!

They are so soft, fluffy and the inside is rolling dream of a buttery, sugary sweet spiced explosion in every bite! You are Gunna LOVE them so much that your gonna become a master BUN baker because your gonna be baking these ALL the time ;)

I made Apple Pie Cinnamon Rolls last November on my YouTube Channel. Ever since I made these buns I feel in a deeply devoted love for them. The good news about these Keto Cinnamon Buns Is that they have basically the exact methodology as my Apple Pie, yet no apples and a few little differences but you can totally see how I got these rolls rolling all up in my oven ;)

Here are myTOP STEPSthe masterings the PERFECT CINNA BUN, The Bakerlita Keto Way of course ;)

STEP ONE: To make this keto dough it is very simple because all you need is 1 package of my Bakerlita Keto Bread mix. If you haven’t watched my Keto Bread Video the process is very similar to make this dough. But I also made a step-by-step video on how to make these Keto Apple Pie Cinnamon Rolls!

STEP TWO: Using a large bowl, start by adding the entire keto bread mix to your bowl. Next, you will need to add just one dry ingredient, Lakanto Golden to make this dough sweet! Whisk it together then set aside for the wet ingredients.

STEP THREE: In a small pot, add full-fat coconut cream & apple cider vinegar. Bring it to a simmer and turn off.

STEP FOUR: Add all your wet ingredients into a high-speed blender, starting with your room temperature eggs, puree vanilla, real maple syrup to activate the yeast, MCT oil (optional) & lastly your hot coconut cream and apple cider vinegar. Place your lid on and blend for 10 sec.

STEP FIVE:  Pour into the entire wet ingredients from the blender into your dry keto mix & fold together until it forms a bit sweet fat-burning lump of keto dough!

STEP SIX: Set keto dough aside,

STEP SEVEN: Grease a large baking pan; 15x11 and it fit the 12 rolls perfectly. If you don’t have a baking pan that size I would recommend two backing pans that are 8x8 greased with a bit of softened butter and set it aside.

STEP EIGHT: In a separate small bowl, mix Lakanto Golden, Cinnamon, nutmeg & allspice.

STEP NINE: Place your keto dough on a floured surface, (I used arrowroot) roll it into a 16x8 inch rectangle.

STEP TEN: Spread the BEST part, BUTTER. Make sure it's softened grass-fed butter, smother all over the surface of the dough.

STEP ELEVEN: Dust The entire cinnamon-sugar mixture evenly over the Keto Dough.

 

STEP TWELVE: Using a sharp knife cut the roll in half, then cut into each half into 6 pieces, leaving you with 12 even rolls and place the buttered baking pans.

STEP THIRTEEN: Bake the rolls for about 30 minutes or until lightly golden brown on top and around the edges, set aside to cool a bit. (If using a ceramic baking pan add an extra 7min to your baking time).

STEP FOURTEEN: To make the cashew cream cheese frosting!

  1.  In a medium bowl & add softened/room temp cashew cream cheese & butter. (You may buy pre-made Cashew Cheese or you May make your own as I did with this RECIPE HERE. Or if you can eat real cream cheese, go CRAZY).
  2. Mix the cashew cream cheese, grass-fed butter, Lakanto Maple Syrup, Lakanto icing powdered sweetener, vanilla extract, and a dash of sea salt in a medium bowl using a spatula.
  3. Work the cashew cream cheese & butter into the icing sugar until it's well incorporated, and then if needed slowly adding a few tablespoons of Lakanto maple syrup until you reach your desired consistency.

 

STEP FOURTEEN: When the timer goes off, let rolls cool down for about 30min.

Once you Keto Cinnamon Buns are cooled it’s time to drizzle the frosting all over your roll & ENJOY every bit guilt-free!

RECIPE

 KETO DOUGH

1 Package of Bakerlita's Beauty-Bread Mix 
1 cup Lakanto Golden
6 Free-range eggs (room temp)
2 tbsp maple syrup
2 tsp pure vanilla extract
1/4 cup grass-fed butter (melted)
1 cup (250mL) very warm water
1/4 cup apple cider vinegar

SUGAR & SPICE FILLING

1 cup Lakanto Golden
1 tbsp cinnamon
1/2 tsp allspice
½ tsp nutmeg
4 tbsp grass-fed butter softened at room temperature


MAPLE CREAM CHEESE GLAZE 

3/4 cup Cashew Cream Cheese (or dairy cream cheese)
1/4 cup grass-fed butter
1 cup Lakanto Powdered sugar
1 tsp Vanilla Extract
¼ Cup Lakanto Maple Syrup (use more if you like a more runny glaze)

INSTRUCTIONS
  1. Preheat your oven to 375 degrees.
  2. Using a large bowl, start by adding the entire *Beauty-Bread Mix* to your bowl. Next, you will need to add just one dry ingredient, Lakanto Golden to make this dough sweet! Whisk it together then set aside for the wet ingredients.
  3. Next, we will need to get a small pot with full-fat coconut cream & apple cider vinegar. Bring it to a simmer and turn off.
  4. Add all your wet ingredients into a high-speed blender, starting with your room temperature eggs, puree vanilla, real maple syrup to activate the yeast, butter, or MCT oil (optional) & lastly your hot coconut cream and apple cider vinegar. Do this step Quickly so your eggs don’t cook from the hot coconut cream. Place your lid on and blend for 10 sec.
  5. Pour into the entire wet ingredients from the blender into your dry keto mix & fold together until it forms a bit sweet fat-burning lump of keto dough!
  6. Next, prep the filling and your pans. I would recommend two backing pans that 8x8 with a bit of softened butter and set it aside.
  7. In a bowl clean bowl, add the drained apples and mix them with about 1 tablespoon of coconut flour to absorb any moisture. set apples aside.
  8. In a separate small bowl, mix together Lakanto Golden and Cinnamon, nutmeg & ginger, set that aside as well.
  9. Place your keto dough on a floured surface, (I used arrowroot) roll it into a 16x8 inch rectangle, spread the softened grass-fed butter all over the surface of the dough.
  10. Sprinkle the cinnamon-sugar mixture evenly over the whole surface of keto dough.
  11. Roll the Dough up. (Watch Video)
  12. Using a sharp knife cut the roll in half, then cut into each half into 6 pieces, leaving you with 12 even rolls and place the buttered baking pans.
  13. Bake the rolls for about 35 minutes or until lightly golden brown on top and around the edges, set aside to cool a bit. (If using a ceramic baking pan like myself add an extra 7min to your baking time).
  14. To make the cashew cream cheese maple glaze, get a medium bowl & add softened/room temp cashew cream cheese.
  15. Mix together the cashew cream cheese, Lakanto Maple Syrup, Lakanto icing powdered sweetener, vanilla extract, and a dash of sea salt in a medium bowl using a spatula.
  16. Work the cashew cream cheese into the icing sugar until it's well incorporated, and then if needed slowly adding a few tablespoons of Lakanto maple syrup until you reach your desired consistency.
  17. When the timer goes off, let rolls cool down for about 30min.
  18. Once you Keto Cinnamon Buns are cooled it’s time to drizzle the glaze all over your roll & ENJOY every bit guilt-free!
