RECIPE

 KETO DOUGH

1 Package of Bakerlita's Beauty-Bread Mix 
1 cup Lakanto Golden
6 Free-range eggs (room temp)
2 tbsp maple syrup
2 tsp pure vanilla extract
1/4 cup grass-fed butter (melted)
1 cup (250mL) very warm water
1/4 cup apple cider vinegar

SUGAR & SPICE FILLING
1 cup Lakanto Golden
1 tbsp cinnamon
1/2 tsp allspice
½ tsp nutmeg
4 tbsp grass-fed butter softened at room temperature

MAPLE CREAM CHEESE GLAZE 

3/4 cup Cashew Cream Cheese (or dairy cream cheese)
1/4 cup grass-fed butter
1 cup Lakanto Powdered sugar
1 tsp Vanilla Extract
¼ Cup Lakanto Maple Syrup (use more if you like a more runny glaze)

INSTRUCTIONS
  1. Preheat your oven to 375 degrees.
  2. Using a large bowl, start by adding the entire *Beauty-Bread Mix* to your bowl. Next, you will need to add just one dry ingredient, Lakanto Golden to make this dough sweet! Whisk it together then set aside for the wet ingredients.
  3. Next, we will need to get a small pot melt butter (coconut oil for dairy-free), water, and apple cider vinegar. Bring it to a simmer and turn off.
  4. Add all your wet ingredients into a high-speed blender, starting with your room temperature eggs, puree vanilla, real maple syrup to activate the yeast, butter, or MCT oil (optional) & lastly your warm water, butter, and apple cider vinegar. Do this step Quickly so your eggs don’t cook from the warm liquid. Place your lid on and blend for 10 sec.
  5. Pour into the entire wet ingredients from the blender into your dry keto mix & fold together until it forms a bit sweet fat-burning lump of keto dough!
  6. Next, prep the filling and your pans. I would recommend two backing pans that 8x8 with a bit of softened butter and set it aside.
  7. In a separate small bowl, mix together Lakanto Golden and Cinnamon, nutmeg & ginger, set that aside as well.
  8. Place a large piece of saran-wrap onto the surface of your countertop.
  9. Place the keto dough onto the saran-wrap surface, taking another piece of saran-wrap, place on top of the keto dough and press down.
  10. Using a rolling pin, roll the dough out into a 16x8 inch rectangle, spread the softened grass-fed butter all over the surface of the dough.
  11. Sprinkle the cinnamon-sugar mixture evenly over the whole surface of keto dough.
  12. Roll the dough by folding the saran-wrap under the dough, the side closest to yourself, rolling it up until it rolls into a big log roll.
  13. Using a sharp knife cut the roll in half, then cut into each half into 6 pieces, leaving you with 12 even rolls and place the buttered baking pans.
  14. Bake the rolls for about 35 minutes or until lightly golden brown on top and around the edges, set aside to cool a bit. (If using a ceramic baking pan, add an extra 7min to your baking time).
  15. To make the cashew cream cheese maple glaze, get a medium bowl & add softened/room temp cashew cream cheese.
  16. Mix together the cashew cream cheese, Lakanto Maple Syrup, Lakanto icing powdered sweetener, vanilla extract, and a dash of sea salt in a medium bowl using a spatula.
  17. Work the cashew cream cheese into the icing sugar until it's well incorporated, and then if needed slowly adding a few tablespoons of Lakanto maple syrup until you reach your desired consistency.
  18. When the timer goes off, let rolls cool down for about 30min.
  19. Once you Keto Cinnamon Buns are cooled it’s time to drizzle the glaze all over your roll & ENJOY every bit guilt-free!
