These keto donuts are SO moist and decadent, and the pumpkin spiced cashew cream cheese sweet glaze makes this combination a forever fall favorite!

RECIPE

CHOCOLATE DOUGHNUT DOUGH

1 cup Bakerlita Beauty-Bread Mix
1/3 cup Lakanto Golden  (monk fruit)
1/3 Cocoa powder 
3 eggs (whole free-run)
1/2 cup full-fat organic coconut cream 
1 tbsp apple cider vinegar 
2 tbsp Coconut oil
1 teaspoon vanilla extract
1 tbsp honey or real maple syrup (activates the yeast)


PUMPKIN SPICED CALMING CREAM GLAZE

1/2 cup cashew-coconut cream cheese 
1/4 cup dairy-free milk
2tbsp Coconut Oil (melted)
1/3 cup Lakanto Powdered Sweetener (monk fruit)
1tsp CALM Organika ***Optional***
6 Drops OOOFlavor Pumpkin Spice  ***Optional*** (or 2tsp pumpkin spice)
1 teaspoon vanilla extract
pinch of sea salt
Sprinkled with Chocolate & Pumpkin Spiced Sprinkles 

INSTRUCTIONS

  1. Pre-Heat oven to 350. Degrees F.
  2. In a stand mixer bowl or a regular bowl if you are going to mix it by hand; scoop out Bakerlita Beauty Bread Mix, Cocoa powder (sifted), and Lakanto Golden, whisk together.
  3. Add 3 room temp eggs, full-fat coconut milk, pumpkin puree, melted coconut oil, apple cider vinegar, vanilla extract, and honey or maple syrup to activate the yeast!
  4. Whisk until well incorporated.
  5. Using a rubber spatula, scrape donut dough into a piping bag (you can also you a big ziplock bag).
  6. Grease 2 donut baking pans with lots of coconut oil to ensure no stick
  7. Cut the bottom of the piping bag & squeeze out the dough just enough to fill halfway up the donut whole pan.
  8. Set timer for 18mintues, bake for 20 minutes.
  9. As the doughnuts are baking you can prepare the pumpkin spiced cashew cream glaze; In a bowl, add cashew cream and thin out with some dairy-free milk, 2tbsp melted coconut oil sift Lakanto powdered sugar, Organika's CALM, Pumpkin Spice Flavor or just pumpkin spice, vanilla and sea salt.

FRYING IS OPTIONAL

  1. In a small pot, add 1 cup of coconut oil or MCT oil, MCT oil is a bit costly, yet it has a much more neutral flavor in-comparison to coconut oil.
  2. Let the oil come to a light simmer… the doughnuts are already cooked, this just allows the donuts to get that desired fried taste.
  3. Place one donut at a time in the pot with simmering oil, about 5-10sec on each side.
  4. Note, you may re-use the coconut oil after for baking if you don’t want to waste the oil.
  5. Using tongs, or any utensils that you can lift your doughnuts out onto a cooling rack.
  6. Once all the doughnuts fired and on the cooling rack are done let cool for 5 minutes.
  7. Dip top of donuts in the pumpkin spiced cashew cream glaze, take a bite and you will never believe these are not the real deal!
